@treitz3, depends on where you get your hatch chilies. The majority I've had have been fairly mild however my ex-mother in law up in WA would make hot sauce with hatches she was getting and let me tell you what....habanero hot, the kind that piss me off with every bite, and I like that

I'm not one to brag (too much) but my ex called me a few months after the big D and said, I miss your food. I said, well, I don't miss your stinky a s s !!! Lol, nah, I only thought it, but knowing her, she was waiting to be invited over so I asked her what she wanted.....basalmic chicken was one of her favorites so she got what she wanted....
My gal is putting me through my paces, so I dug into my Sicilian roots and made this for her over the Labor Day weekend, I give you, chicken carbonara with prawns and bacon...
