    Do not microwave the leftovers. My own experience, it amplified the gaminess of Lamb. I've always grilled lamb chops, slow cooked leg of lamb..

    Hot cast iron or grill, sear it like you would a beef steak, finish with herb butter or chimichurri. Cook to 145 internal.

    Rosemary, garlic, lemon etc. in a marinade (Spiedie sauce if you're in WNY)
    Grill to 140-145 as pointed out above.

    Although I've made Lamb stew out of it before. That kinda waters down the gaminess.
