Saw a pork belly on sale. $5 for a 2 pounder.
Smoked/roasted to internal 202F, under the broiler for a few minutes, chopped, and turned into "street tacos" with Asian slaw and Sriracha mayo.

Did a rib eye roast to get some killer prime rib.....slow smoked on my new smoker, charcoal and oak.
Yes, it was as tender and juicy as it looks and man o man it was good!!

Right!! I do an all-steak chili done the same way as above, cook in the ingredients, cool down, fridge and start slow cooking it over again. I just use chuck but it is soooo tender by the time it's ready to eat.Set up:

I made a variation with field peas, smoked sausage, rotel, and I cooked the rice in the liquid so it was almost like a jambalaya texture. No pics here either. It tends not to be the prettiest food, but that and cornbread make great football food. -

How do you prepare a Rotel for cooking, I would thing a food processor would have a hard time with capacitors and circuit boards. Power supplies are a whole other issue. Believe it or not, I just cooked the tastiest, most moist, tender and juicy pork butt I have ever done in my life.....get this.

I have a BGE, charcoal grill, pressure cooker, rotisserie and slow cooker. Tried all of them. Well, tonight, I was pressed for time and had to cook the PB before the storm arrived and power went out. (we obviously still have power)
I didn't have time to look up a recipe, as I was cooking other items as well, and I didn't have time to go to the store to get anything. So, I made up a recipe in my head and went for it.
Well, I'll be damned if it wasn't the best tasting PB I have ever cooked. I know what I did and it is (or should be) repeatable, but damn. The flavor was OFF THE HOOK good and the tenderness was on the same plane. Who knew you could do something so profound in a daggum oven?

@treitz3 good on you!! It's rewarding when you do a PB out of this world. Mine gets requested from time to time. I slice mine, rub it and marinate in IPAs overnight. Put it on the smoker the next day in the IPA. I rotate it occasionally and when it starts falling apart during rotation, I pull it, let it rest then shred it or chunk it. Makes great pulled pork sandwiches, tacos and incredible carnitas.

What else would you expect with a dish called chickpea and broccoli curry? This was made with dried chickpeas. A 1 pound bag will be the equivalent of about 6 to 8 cans.

Exactly. Not trying to be the carb police though. Chickpeas (lentils 55%) are 57% calories from carbs. No the worst. You could probably try substituting chopped cauliflower (39%) for the chickpeas but I'm sure it wouldn't taste as good. I posted that picture once before. I'll see if I can find it. Nutritionvalue.org is a good site. You can even put in your recipe and it will give the macros.

Well, I'm not on a strict keto diet or anything like that. Just trying to be more balanced. Chickpeas are far healthier than box pasta or white rice. For the entire pot of curry, I used about 1/2 cup of dried chickpeas, which is only 260 calories from the legumes, and it made about 6 servings of the stew. Trying to cut back on industrial processed foods as well. -

Last night was good for some chili.
