nice! must say it looks damn good.

Simple supper. Most people make this with some type of ham. I like that too, but the bacon and the fat gives it a nice flavor. Just a tad of vinegar, NOT vinegary like a hot German Potato Salad. Need to use fresh green beans. Salt, pepper and I sprinkled some freeze-dried chives on top.

Being able to use a charcoal grill is a wonderful thing. When I'm grilling steaks, my go-to method has always been a couple of pats of butter with every flip. That is now a thing of the past. My new secret weapon is beef tallow with every flip....ooops the cats out the bag. Words cannot describe the finished product; I slapped my own self it was that good!!

I have been doing the same thing, since about 3 or 4 months ago. It's a different flavor but the sear and taste is off the hook good. Even with something as simple as a burger.

Here we have, steamed baby spinach, buttered with salt and pepper. Grilled fillet dipped in Italian dressing and covered with beef tallow with each flip.

This thread needs a resurrection.
Saw a pork belly on sale. $5 for a 2 pounder.
Smoked/roasted to internal 202F, under the broiler for a few minutes, chopped, and turned into "street tacos" with Asian slaw and Sriracha mayo.

Did a rib eye roast to get some killer prime rib.....slow smoked on my new smoker, charcoal and oak.
Yes, it was as tender and juicy as it looks and man o man it was good!!

Right!! I do an all-steak chili done the same way as above, cook in the ingredients, cool down, fridge and start slow cooking it over again. I just use chuck but it is soooo tender by the time it's ready to eat.Marantz AV10-Emotiva ERC3-Denafrips Venus-Panasonic UB820-AudioQuest Power Quest 707-Emotiva DR3, DR2, XPA2, XPA6-Focal Kanta No2, Sopra Center-PolkAudio RTiA9, RTiA3, LSiM 702F/X-Epik Empire-SVS SB5000-11.3 -

I made a variation with field peas, smoked sausage, rotel, and I cooked the rice in the liquid so it was almost like a jambalaya texture. No pics here either. It tends not to be the prettiest food, but that and cornbread make great football food. -
Okay, this may not look appealing to some of you, but if you like Indian cuisine, this is what I made tonight. Chickpea and broccoli curry with some masala seasoned chicken added at the end, skillet fried in ghee separately.

Doc tells me I need to get rid of the pasta, rice, carbs. I'm trying...
BTW, this is a shallow bowl. I had two+ bowls.

How do you prepare a Rotel for cooking, I would thing a food processor would have a hard time with capacitors and circuit boards. Power supplies are a whole other issue. Do you boil them first like potatoes?skipshot12 wrote: »Made the southern dish Hoppin' John for New Year's Day to usher in some good luck for 2026.
