Secret recipe chilli to eat on its own, and leftovers will go to make chilli burgers for Tuesday’s lunch!

    Looks good John. I was debating on making some Beef Stifado tonight. Braised beef tips in a red wine/roasted tomato sauce with pearl onions, rice and mashed taters.

    Im tired but it sounds soooo good that it's worth the trip to the store.

    Looks like you went all out on that chili looks good. I make a pretty good venison chili
    However tonight I took the easy way out, I told the missus dinner is on at 7:00 Kirkland Lasagna pre bagged salad and some avacado salad dressing. Hey this kirkland Lasagna ain't bad preheat the oven at 375 listen to a few CDs and dinner is served.

    I gave it way too much of a kick this time. This recipe, sometimes it’s hard to get perfect because a fair amount of heat comes as it simmers down. Last time I needed to give it a boost and this time, I will end up making a bit more to mix this into and settle it down some.

    I've been doing salmon lately with nothing but salt and pepper (and a little butter) as seasoning and my family loves it. I'd be all over the meal you've got there Zach, but unfortunately I'm the only one around here who likes Brussels sprouts. Also, nice plates. Almost exactly like ours:)

    That's an interesting twist on regular mac and cheese Cody. After all everything tastes better with bacon, or so they say.

    Why yes it is, 12 incher. Got it on sale for $12 at my local grocery store.

    I do some twists on Mac and cheese to spread out my dinner lists. Sometimes I make a shredded BBQ pork Mac and cheese or green chili and ground beef. If I have steak I need to make but don't want to finish it traditionally I will slice it thin, brown it in the skillet then make my rue for my cheese sauce with the left over fats and scraping.

    John that's funny. The day before you started this thread my daughter and I made a giant pot of chili. Cooking is a family event in this home. Sometimes that's the only time we have to get together. I always have quart Mason jars handy to can the excess. Keeps a long time that way in the fridge. Also, you're right, chili only gets better the longer you simmer.

    Last night we made steak fajitas. YUM!
    1 pound of stew meat finely chopped.
    1 TBSP Taco Seasoning
    1 Chopped Onion
    1 Chopped Green Pepper
    1 Chopped Red Pepper
    1 Chopped Poblano Pepper
    1 Cup Chopped Crimini (small Portabella Mushroom)

    With the meat chopped up in a bowl, sprinkle the seasoning on it and knead in until mixed well. Set off to the side to marinade at least 30 minutes. This is when I chop the veggies and combine all in a big bowl. Next I add a tablespoon of olive oil to a large cast iron skillet, preheat, then add the meat to brown. Once the meat is browned add all the veggies and cover stirring occasionally for about 15 minutes. Uncover and cook off excess moisture.

    Two things that are the BEST the day after sitting in the fridge, Chili and Enchiladas.

    Hot dang I want some Mexican food now. Some Flautas sound great, we shred Chicken ****, add salt/pepper then mix in green chili, sour cream, roasted corn. I use that mixture to fill corn tortillas, roll em, pan fry them (not deep fried so we maintain some chewiness to the tortilla) then serve with a nice dipping sauce. Usually either an Avocado Crema, Salsa Verde or my wife's favorite half cream of chicken half cream of mushroom soup.

    Even if I cook I LOVE having a wife from the border of Mexico, her family gives me all sorts of ideas I go wild with.

    We came up with a deconstructed Tinga, get Chicken ****, butterfly them, stuff with Chorizo (cooked and not the cheap tube kind, if you need a homemade recipe PM me, I got that Grandma recipe gents). Rub the chicken with chipotle and tie with chef's twine. Bake at 350 for 20 min then flash sear on a hot cast iron pan.

    Man, I need to take a lunch break at work. Be back.

    A buddy of mine told me he likes to buy a half a cow of locker beef and wanted to know if I was interested. I told him until they invent a cow that is all ribeye that will never happen.

    Tonight I cleaned up my chili by cooking up another pound of ground beef, and adding all the other ingredients without any seasoning whatsoever. I then folded in yesterday's batch and blended the two together... perfection!
