Make broths and freeze celery and onions

You can pickle or can the carrots

Spicy pickling the carrots are yummy

You can partial boil or roast and freeze carrots for later

Invest in a vac sealer if you do this kind of stuff often

Bring them over, I was going to crockpot a chicken but the line to get in a store was too long.
When I was a kid my parents told me to turn it down. Now I'm an adult and my kids tell me to turn it down.

Juice the carrots and celery. Freeze in old milk jugs. Add apple juice as you go.

Donate to a food bank or homeless shelter, better than throwing it all away.

Another one is Bolognese Sauce. I'm making a batch right now that takes 3 hours to cook. You have to chop the mirepoix up pretty fine in a food processor and you can't even tell it's in there, except for the taste of course. https://www.bonappetit.com/recipe/bas-best-bolognese
