Ron, I am trying to clear out stuff for the move, so I don't want to prepare anything for future use. Boy I sure want some Jambalaya but the would leave me with a bunch of carrots. -

Ron, I have a neurotic aversion to throwing food away, my parents grew up poor during the Great Depression and they never let me forget it. Hell, it was like I was there! -
This looks like a great recipe and it doesn't call for green peas, I no longer care for them after that episode with the ****.

I thought of that but I got no beef and just look at my taters!
I am trying to deplete my on hand stock, great timing huh? BTW don't store your taters under the sink, you might forget about them. -

If you have a chicken corpse handy, you can make stock & freeze it for later.
I guess you could use any kind of corpse, but it might not taste like chicken.
Another good thing to do with celery & carrots -- get a big old tub of hummus, cut the aforementioned vegetables into strips, and eat them bad boys, dipped in hummus.
We have carrot sticks & hummus as an afternoon snack virtually every day.

Juice the carrots and celery. Freeze in old milk jugs. Add apple juice as you go.Don't take experimental gene therapies from known eugenicists.

Another one is Bolognese Sauce. I'm making a batch right now that takes 3 hours to cook. You have to chop the mirepoix up pretty fine in a food processor and you can't even tell it's in there, except for the taste of course. https://www.bonappetit.com/recipe/bas-best-bologneseGeorge / NJ
