    Love scallops!

    Sea scallops sauteed in butter and smashed garlic...lots of it. The beef is tenderloin, seared in butter and smashed garlic which is later used to make a sauce with dry vermouth and Worcestershire. The Steaks are finished on the grill to med rare.

    While the steaks are resting, more butter and more garlic is added to the searing pan to finish the sauce. Everything is plated, the sauce goes on the beef and then goat cheese is the final touch.....thanks for drooling :D

    Yes, it is. It allows VTA on the fly. Otherwise, once you loosen the set screw, the arm would drop. :)

    I had to learn to drive those outdated postal trucks when I was supervising, not that difficult to handle, different for sure. At least I didn't have to manually shift like @F1nut is pointing out, that would be a struggle.
