    try Adams brisket rub in the walmart spice section. good on ribs, brisket, pork and chicken. just add course grind black pepper and you're ready to go.

    Not that I was asked, but I use my Char-broil propane fueled "RED" grill because it uses infrared heat and I NEVER worry about flare-ups. I do admit however that you cannot beat the flavor of a charcoal grill.

    I've had steak out of that thing Wes has, and he knows how to cook with it.
    My equipment sig felt inadequate and deleted itself.

    Best cheap charcoal grill you can get. It seals up tight so you can snuff flames out with the lid. Put your wood on dry so it starts on fire. Throw the steaks on and put the lid on.     I would actually get the weber preformer silver. The only difference between the gold and silver is the ash catcher, and the gold comes with a hinged cooking grate. I prefer the silvers ash catcher (pie tin) because it doesnt hamper air flow through the bottom dampiner / vents. A hinged grate cost 20-25 bucks. The charcoal baskets are not really needed. I have a pair but have used them only once or twice.

    The older golds came with a temp gauge in the lid. I just bought a replacement one and modded my silver. I just dont have the facey cover to make it look factory.

    Weber kettle works very well. I use the electric starter. Bag of coals last most all summer.

    Yea it is real easy. You drill a small hole in the metal strap iron that the handle attaches to. Then go about 2/3 to 3/4 the way back between spot welds on the inside of the lid. Drill a hole there and lay the drill over after you have drilled the hole. This should make an oval shaped hole.

    You just want to use a drill bit slightly larger than the diameter of the thermometer.

    You then just push the thermometer throught the hole in the handle strap iron and down in side the lid. The temp probe will follow the cuve of the lid and not hang to far down.

    The older performer golds had this thermometer but they had a pice of metal to cover it up so it looked more finished. Why weber quit doing this I dont know because it is super handy when cooking whole chickes, prime ribs, ect. When I grill a steak it is at 550+. 4-5 minutes on one side 3-4 on the other only turnd once.

    You want a Weber 9815 replacement thermometer. They dont list on webers site any more as replacemt parts. I think they are starting to discontinue them. Ebay has them but they are nothing special just a 0-550 deg F thermometer.

    Here is a pic. You just want to drill the hole in the lid more twards the other side of the handle. That way you dont bend the probe because it will ruin or make it in accurate.

    I grilled these Spicy wings last night, added a homemade Jim Beam glaze just before pulling them off. Served them on side with homemade New Orleans Gumbo. Delicious meal. Nice pics gents.

    have you checked costco for their various grills of late? i completely forgot to delve into for ya because we were in a hurry, but they had some new (to costco) charcoal grills on display, complete with a representative to demonstrate. i noted one that had some sort of side box where they had some pellets which i assumed were manufactured wood pellets for smoking.

    in any case, there's always something different to check costco for. i always incorporate them into my future purchase planning.

    That would be a Treager (Name brand). You just set the temp on a dial or digital screen and it automatically maintains that temp. They have a little fire box that the pellets fall in. There is a fan to circulate the smoke and heat to make for an even temp. I would call it a wood pellet oven.

    I dont know. I just seen that is how they use to be mounted on the performer golds. The handle helps protect the thermomter if you drop the lid.

    I was worried about using one like that because of the probe on the back being to long. The webers lid is short and I didnt want to worry about big cuts of meat touching the probe. Like doing a beer can chicken. That one you posted looks pretty resonable though. Some of the ones I was looking at had long probes. With the setup I have there is 2.5 inches inside the lid and it only hangs .5 inch down from the inside surface of the lid.

    I wanted it in the top because that should be a good average of the temp inside. If you mount it lower on the side you could just be measuring a hot spot or cool spot depending on how you have the coals arranged. (I do a lot of cooking with a split fire and a 9x13 cake pan of water between the coals, or just coals on one half of the grill.) How much it would varry I dont know. You can always turn the lid and see if it changes much with the probe being over the coals.


    If you get one like mine you could always just drop it down through the top vent to check the temp. Then you wouldnt have to do anything perminant to the lid.

    No issues with this one? I see some minor annoyances in the comments for it, but nothing I can't deal with.

    I've been looking for a good temp monitor for a while. I sleep about 75 feet away from my smoker, so this seems like it would work perfectly for me and it's at a nice price. I've been reluctant to spend $75 on a temp monitor - $34 is a little more reasonable.
