What cut, and how are you cooking it? Sauce? Details man!, if you're gonna make our mouths water, we wanna know exactly what we're missing.
While I prefer it smoked, it's awfully good in a dutch oven as well.... -
Do you do it start to finish on the grill/fire or, start off in the oven or crockpot? I do it with a Boston butt in a 260degree oven for approx 8-9hrs. and then 2 or 3 hrs. on the Weber with charcoal & hickory chunks. Yum:)

NC pork does rock but I do not like the mustard based crap they serve down here, even the award winning ones.
The best I have ever had was at a shin-dig over at Shane's house. We cooked a whole pig in the same vat as 200 pieces of chicken, vegetables and spices. Vinegar Scott? Yuk.
Yes, It's certainly different than what we would call BBQ sauce here in Texas. While the cooking of BBQ seems to be similar, the rub and sauces seem to have more of the local influence.
Typical Recipe....
1 cup cider vinegar
1 tablespoon salt
1/2 teaspoon cayenne pepper
1 teaspoon crushed red pepper flakes
1 tablespoon brown sugar
In a small bowl, combine the vinegar, salt, cayenne pepper, crushed red pepper flakes and brown sugar. Mix well and allow ingredients to mesh for about 4 to 8 hours before using.
It was a surprising difference to what I was used too and I will say that it blended well with the Pork. That is what I would call a traditional NC BBQ sauce. ok it was so good.. dripping with bbq sauce

i used a shoulder pork roast.. put it in the crock pot with two chopped onions, one chopped green pepper.. the juice of two limes and heavely sprinkled some grilling rub all over the roast.
cook in crock pot on high for 6 hours.. removed from pot, shredded it.. added a local favorite bbq sauce and back into the crock pot for another hour to heat though and enjoy.
had it over grilled good quality hamburger buns with COLESLAWPolkFest 2012, who's going>?

Inspired by you guys, I am cooking pulled pork in crook pot since last night. LOL
Let's see what the wife said when it's cooked but now smells like vinegar. I put a little too much vinegar, lime and onions. It tastes good but how do I reduce the tangy smell?Trying out Different Audio Cables is a Religious Affair. You don't discuss it with anyone. :redface::biggrin: -

leave out the vinegar next time and just use the lime juice. the juice of two limes is what I used... no sour taste. and I'm thinking if you did use vinegar.. 1 cup is way to much.. maybe 1/4 cup at best. a little vinegar goes a long ways.. less is more.PolkFest 2012, who's going>?
