They'll be cold by the time i get there.
I was going to make some for Nik today, but he managed to do an hour and a half drive in 45 minutes, and he spent the time waiting for me, eating at Cheeseburger in Paradise.
So i didn't have to cook.
But... shrimp scampi tonite for me! And maybe if my new kitties are lucky, they might get a bite or two.I don't read the newsssspaperssss because dey aaaallllllllll...... have ugly print.

Alright ceinega here's your recipes:
NACHOS:
1lb ground beef
1 bag of your favorite tortilla chips
1 packet taco seasoning
1 can refried beans
8oz cheese (cheddar, mexican mix, whatever)
1 tomato
1 3oz can black olives
Sliced jalepenos.
In large skillet, brown and cook beef with the taco seasoning.
Arrange chips on large pizza pan. (18" is used in my pictures)
Warm up the refried beans in a pan so they are easier to work with. Spread them over the top of your chips. Add the beef on top of that.
Dice the tomato and add on top of beef. Add olives. Add jalepenos. Add cheese.
Preheat oven to 350.
Bake nachos until all cheese is melted and is just starting to turn brown.
Enjoy! (Substitute veggies for whatever you want)
LASAGNA:
Buy: (one pan recipe)(assuming you have normal spices)
1lb lasagna noodles
2 cans of your favorite RAGU tomato sauce
1lb bulk italian sausage
1 onion
1 clove garlic
1lb mozz cheese
15oz Ricotta cheese
8oz shredded Parmesan cheese
1) In large pan, sautee sausage, half onion, and 3 garlic chunky things. (name escapes me right now).
2) Boil lasagna noodles til not quite cooked, floppy, but firm
3) preheat oven to 350.
4) In a medium bowl, combine ricotta cheese, a 1/4 cup of parmesan cheese, tablespoon of oregano, half tablespoon of basil.
5) Dump the tomato sauce in the pan with the sausage onions, and friends.
6) in large baking pan, spoon half the tomato mixture directly in. Then put a layer of noodles. Then a layer of the cheese mixture, top that layer with some of the mozzarella. Then layer of noodles, remaining tomato mixture, layer of noodles, remaining cheese mixture, remaining mozzarella, and sprinkle parmesan cheese over the top.
Bake at 350 covered for 40-45 minutes. Uncover, bake for 15-20 minutes, or until cheese has all melted and is becoming golden brown in places, and the edges should be bubbly.
Let sit for about 15 minutes, and enjoy.
Now, that was the easy way, and honestly, the different i personally see using homemade tomato sauce isn't worth the hassle to me unless i have extra. I use homemade tomato sauce for spaghetti, not something like this. YMMV, if i had the time to spend a whole day making some killer reduced tomato sauce, i'm sure i would have a different opinion.
But for a bachelor, or a couple, this is a great way to make an easy 3 meals for under $20. Double the recipe and freeze a second pan uncooked and bake it at a later date. Thanks for the recipes, I will print them out. Where do you buy your spices? I order mine from Penzeys and would highly recommend them. I initially buy the glass jar of the spice I like and then buy a 4 oz. bag to refill. Get one of the catalogs if your interested - it's much better than the website.

My B-Day steak last week and a pizza i made last night.
Pizza dough i just bought from publix and had to let sit out for hour.
1 Bulb of Garlic I roasted in oven for hour then mashed with some EVOO to make a paste. Smeared that all over the dough. Then got some Classico Petso and smeared over the roasted Garlic. Then Plenty of Fresh Mozz cheese then sliced maters, then rest of cheese. Threw on top of a Hot pizza stone. Bake, then bake the pizza, then enjoy
The burnt stuff on the pizza is the Garlic and Pesto which has an amazing flavor when its nice and crispy. Yummm. Just had the leftovers for lunch.

They come in very handy. Total of the pizza cost me 7 bucks to make and taste much better w/o the heartburn of the local pie shaks.

As a heart patient i don't eat eat pizza unless my wife makes it low fat and low colesteral. She does a damn good job too. But i'd still like to go to boston and get one just one more time. Its been since 1993.
