Harry Nilsson.
Glad to see him mentioned above. Lennon & McCartney both said, at one point, that he was the best. Lennon & Nilsson got up to some hijinks in later years, of course.
Harry Nilsson certainly wrote some great songs, but some of his best-known songs were covers.
Early in his career, he did a full album of Randy Newman songs. Compare his version of Living Without You with Newman's, and see what you think.

Sinead O'Connor's version of Sacrifice is indeed superb.
Sting (?!?!) does a marvelous version of EJ's weird, atmospheric early song Come Down in Time on that same album (Two Rooms), too.

I've been listing to Blackberry Smoke a lot. They do a good cover of this Tom Petty song. Wonder Woman playing the violin makes it even better.
