    How are you liking the III? My vision’s fire box was shattered during my move. Think i am going to go with a classic II as I am not sure I will use a lot of the added features of the III. Beautiful grill though

    That Thermoworks recipe is OK but go big or go home. I want to make their Bacon wrapped Fatty Patty on my smoker. My girlfriend watched in horror as they added more and more artery clogging ingredients but at the end she agreed it looks tasty and wants to try one. I couldn't figure out how to paste the autorun video but click here and you will want to make one too.

    It’s worth the extra coin for the sloroller alone. Add the vent, gasket, stand it’s a no brainer.

    Did you ever make a burger and mix in some Jimmy Dean sausage?

    I mixed sausage with ground deer to give it some fat but never tried mixing it with beef. What scared me off is I worry about huge grease fires when grilling directly over coals.

    a lot of times there is more grease in beef than pork.

    If you have a ceramic coal burning grill, (green egg, KJ etc) you don’t need to really worry. You can close all down and contain.
    Now I will say I have changed my tune about wood grill tables after seeing one of my catch on fire.

    I went with the Classic ||. The sloroller was intriguing but the navy exchange sells the II for 1099 tax free. 600 more for the sloroller and some other inconsequential upgrades for me seated the deal on that one (the II has the same hinge, gasket, and control vent as well). I was actually closer to getting the big joe at 1799 than the classic III.

    Have heard of some kamado joe QC issues of late but here’s to hoping I got a good one. Picking it up on Friday

    Congrats Zach. I’m sure you’ll love it.
    Good thing about the KJ, assuming it was acquired from a dealer, is that they cover any QC issues without question.
    I got lucky on mine I guess. All good.

    You’ll love the divide and conquer grills. Get the cast iron grate, best accessory IMO.

    180* on Green Mountain Grill Daniel Boone until 105* then reverse seared on my Weber Genesis until 130*.

    Amazing. Not a Komodo but I totally love the reverse sear on any steak.

    My uncle was just telling me about prime rib he smoked. He said lots of salt and pepper rub for a day or two prior in the fridge, then when you’re ready to smoke, soften some butter til it’s like a paste and mix in some garlic and rosemary. Rub that all over it. Then throw it in the smoker. Not sure what kind of wood he used. But he said it’s one of the top two or three things he ever smoked.

    Picked this up on an Amazon epic daily deal back in November. Came with all the Normal extras for $839 shipped! I was so stoked. I built this table using an old cedar armoire we had bought at a yard sale for $30 about 15 years ago. It’s not perfect but I’m happy with it for the time and effort:
