Knives for prepping/slicing BBQ meats?

what knives do you use for prepping/ slicing your meats for BBQ?
I just got this one in, it's so sharp that you can take that thick membrane on that skirt of meat on the back of a slab of ribs off without taking any meat.
most times I just cut it off and cook it by itself but it's still a tough chew with that thick membrane.

this was on sale for a lot lower than it is now, haven't used it yet because I'm too lazy to cook a brisket :D

    Nice knives you got there. I use a couple of boning knives I got at Cabelas, and My trusty old Rapala filet knives got a few of them.

    I took a chance and ordered what I thought was a good set of knives online from Vertoku. I went for the full 8 pc set. They did not disappoint, every one of them is very well made and sharp enough to shave with (no I didn't try). They also follow up the sale with emails, I liked that.

    As for brisket, I would take a page from @jstas book and buy an electric knife for finish cutting. Only problem I saw when he used it was the meat basically fell apart but that was not the knifes fault; the damn thing was so tender trying to cut anything less than 1/4" thick slices was futile. ;)
    So, are you willing to put forth a little effort or are you happy sitting in your skeptical poo pile?
