Here's something to keep you busy while at home.

Joe Yim. This kid was (is again?) a school teacher in Chicago who quit his job and moved to Austin to learn Texas BBQ.

He worked at Terry Blacks, and a bit at Truth BBQ and some instruction from the guys at Stiles Switch. Here he shows you how he was taught to trim and cook brisket by looks and feel. No temp probes used and no temps are mentioned.

There's a million ways to trim and cook a brisket. But he's showing you how he was taught by the top Texas BBQ joints to do it.

    after paying $40-$50 for a brisket it would kill me to trim that much :'(

    Mmmmm brisket :p

    I normally use the Aaron Franklin method of trimming myself. Not too far off of this one but I don’t think Aaron trims his briskets quite as much. He talks about making the brisket aerodynamic so that the smoke flows over it nicely. I’m not sure how much it matters but it has worked for me so far.

    My biggest issue is finding a decent supplier of choice or prime grade briskets in Northeastern Maryland. Every time I go to cook one up I have to search a million places to find one lol. It becomes more work than the actual trim and smoke of the brisket itself.

    The biggest lesson I learned about making brisket...and also the most important...leave it ALONE.

    Too often, I would constantly check on it and was always disappointed when it would come out of the smoker.

    The last several I have done have come out amazingly good and the only thing I changed was putting it in the smoker and ignoring it for 12 hours. Obviously, I would maintain smoke for the first couple of hours and make sure the temp stayed right around 220*. But otherwise, I never temped it and it works great.

    yea, put two or more briskets on and you can bet they will not be ready at the same time. get you a case or two of beer, they're ready when they're ready B)
