Thanks for the suggestions so far!

I've decided to go with a Texas themed party since he's going to grad school at UT Austin, and his fiance is from Texas. I know we'll eat at a hole-in-the-wall BBQ joint, and for the day I'm getting him a "I mess with Texas" shirt. Maybe we'll hit one of the local shooting ranges, but whatever the rest of the festivities, they need to support about 30 people.
