On the HDMI cables you can look at monoprice.com I purchased already products with them. Quality of the products is really good and the prices are very reasonable.
Are you building the wall or is somebody else doing that job for you? -

I'm having a contractor build the wall.

Is the contractor going to run all wires (speaker wires, HDMI Cables, etc.) on the wall for you? That should include AC power outlets for your flat screen TV.
If you are thinking on probably adding Front Presence Speakers to you setup (this is an extra set of speakers for additional movie effects) then it will be a good idea to run those wires on the wall now. That doesn't mean that you will install them right away. It is just in case scenario. If you go for that, make sure to take note or take a couple of pics to remember where the cables are located. So, in the future when you are ready to buy/install the additional set of speakers, you will have the speakers wires ready to install without making a mess on your front stage.
Other than that (which is totally optional) I think you are good to go.
Well, one more thing, cable/wire management. You can ask your contractor to also run the subwoofers wires inside the walls to your receiver. By doing that, you should keep the really clean look at your front stage. For this you can use a single RCA connector wall plate like this one:

Yeah Im having the contractor run all of the wires for the speakers and the other entertainment items. Also running an extra conduit for anything that might get adden in the future.
Where would you suggest putting the subs? On the front wall with one on each side of the tv?( about 8 ft apart from each other?) -

Cool. Yeah, the extra conduit is a great idea to avoid issues in the future, don't try to same money there and ensure you will have a very wide one (capable of handle multiple wires).
I upgraded my subwoofers few weeks ago and the advice received from the company (SVS or SVSound) was to place them at my front stage at each side of my AV Console (they are 6ft apart from each other due to space limitation). Have a look of my front stage:
TV is a 51" Plasma, that looks really tiny with those speakers. So, my 2013 project is to add a fixed screen and a projector......
