The Shrek soundtrack, or rather, Shrek: Music from the Original Motion Picture, is a fun collection of songs, with the highlight for me being Rufus Wainwright's rendition of Leonard Cohen's Hallelujah!
There's also the Eddie Murphy as Donkey singing a song written by Neil Diamond and made famous by the Monkees - I'm A Believer (also covered by Smash Mouth on the album). -
The Star Wars soundtrack by John Williams and the London Philharmonic turned me on to Classical music at a time when Van Halen and the Beatles were all I would listen to. It was a pivotal moment in my appreciation of all forms of music. The Gear... Awesome soundtrack!! And it reminded me of another similarly violent movie with great 60s and 70s music - Reservoir Dogs.
Although I'll never be able to hear Stuck in the Middle with You again without cringing... Razor blades make me squeamish!
