If the hole saw bit had a drill in the middle, how did it jump around?

The pilot bit depth can be adjusted.
If the tip of the pilot bit is barely sticking out 1/32" from the teeth of the hole saw, than the hole saw will start to bite before the pilot has gotten any anchoring depth to it (especially if you are even a little bit angled).

Set the pilot bit depth deep, drill straight, drill slow to start until the hole saw gets a good bit in a complete circle, than drill at a high speed with a light pressure.

At higher speeds and light pressure, it helps "plow" through any imperfections in the wood. Have to keep a firm grip on your tool.

    That's what she said.
Check your lips at the door woman. Shake your hips like battleships. Yeah, all the white girls trip when I sing at Sunday service.
