Thanks guys, I'll check that one out. It looks like it is a tad bit more mild, but I can always mix it with another sauce - or actual peppers - to bring the heat back up.

Any Habanero sauce that uses sweet fruit in its flavor profile is a no go here.

Sweet Thai Chili typically isn't crazy hot. It's on the mild to medium range of the scale. You can, of course, add heat but if you do, go with an Asian hot sauce like Siracha or a basic pepper sauce like Frank's Red Hot or Tabasco or just add powdered Cayenne or chili powder. Better if it's one of the Thai chili varieties 'cause then it won't mess with the flavor profile.

If you get a Sweet Thai Chili sauce that's too hot for you, you can cut the heat with some water and sugar.

It's a great dipping sauce, though. Chicken wings, egg rolls, potstickers, wontons, etc...all good.

But it also makes a great glaze and/or marinade for shrimp, tuna steaks, swordfish steaks, salmon, chicken and even pork.

I've done sweet thai chili pork ribs as experiments and they were the most popular of the ribs I made.

I've also made corn nuggets and/or corn fritters and used sweet thai chili sauce instead of syrup, honey or sugar.

It's a favorite for me on chicken wings, though. It's up there with garlic-parm sauces in the savory department.

I’ve also used the Melinda’s Sweet Thai Chili for a while now. I like it, though I’m more a fan of original wing sauces. It’s my wife’s favorite and my son likes it a lot as well.

Tom, you’re right on wing prices. The last time I went to Wingstop, it was over $80 for, I think, 50 wings, 2 large fries, and cheese sauce. The only wings we’ve had since are grilled on the Weber.

@treitz3 I guarantee you, if you tried my wings, you'd love them, even though they can be smoking hot. The technique I use lets you taste the seasoned chicken first, then you get backlash from the heat, but, it's too late, you're committed.

Not meaning to brag (too much), everyone that has my wings says the same thing, they've never had wings that good no matter where they've been. And, a few complain about the heat, saying that it's tearing them up, but they taste so good, they keep eating them.

It's the same with my no-bean-all steak chili, the way I add the serrano chilis, the heat doesn't hit you at first, you get locked into the flavor and suddenly your mouth is a glow'n.

You ever make to my side of town, I'll hook you up.

San Antonio area. I was horrible not to meet up with Geoff, but we were so slammed, I was in the Dallas area while my guys were handling south Texas. Big regret

Hmmm, maybe one of the times I go down there for LSAF or SWAF. I missed the past two years.
