    I know this will be considered a no-no, but I love wings from Publix. But they aren't crisp enough so I put them in the air fryer for about 18 minutes and they come out great, imo.

    Yes sir, wing night last night.....I had my usual "blow the rear seals out" and Ayesha wanted lemon pepper, I suggested "garlic" lemon pepper, she was down.

    In a 6" sq baking dish, I finely diced 6 cloves of garlic, squeezed juice from 3 lemons, heavily peppered with coarse ground blk and half a stick of butter and put in the oven minutes before the wings were through cooking.

    Once the wings had baked for 30min on each side, they were coated and baked for an additional 4 minutes each side.

    I have to say, pretty darn good. You can see by the pics that the wings were coated pretty heavy with garlic however the taste of lemon was the first thing you get, then the pepper and only a mild hit of garlic.

    Ok, so, did a couple chicken thighs the same way I do wings today. The only difference between thighs and wings is the wings tend to have the skin all around so it doesn't come off in one slab like the thighs do.

    But, I pull any chicken pieces out when the seasoning gets the appropriate color and the chicken fat is sizzling in the bottom

    One thing I do is if I am using a glas baking dish, I put some oil in because the glass doesn't get hot enough for anything stuck to release easy like a metal sheet pan does.

    This is start to finish:
    - Raw chicken in pan, salt and black pepper
    - Covered in garlic powder
    - Covered in paprika
    - Drizzled some oil in the pan
    - In the over at 425 for about an hour until the seasoning starts to blacken

    And yes, meatballs in a cast iron frying pan in the over with a dollop of bacon grease in the bottom is proof God loves us and wants us to be happy.

    At our bar restaurant our hot wings were made using only Dave’s Insanity sauce.
    How Chef Dave would make mild, med and hot was determined by how much the insanity sauce was cut with butter.
    Our hottest wings were straight insanity sauce and we called them “**** in the Tub”, one A and two S’s
    No bs.

    We had a younger fella would come in at 5 o’clock every Friday.
    He’d order arse in the tub with sides of straight insanity sauce and dip them.
    People would sit there and watch this guy eat those suckers with him not breaking a sweat!

    Okay, it was wing time once again!!! This time I slathered the lemon/garlic/butter coating on mine as well. 6 cloves of garlic, 3 large lemons. In a 6" bowl, I yielded an inch of juice.

    In fact, this was my best yield to date.....SOOO sofa king good. Fall off the bone tender, juicy and just plain yummy. Now, only one drawback, the lemon juice cut some of the heat on mine. Gonna have to up the heat ante on the next batch.......take a look at the garlicy goodness!!!!

    Since I don't do sauce so hot, you can't taste the chicken wings themself.....and it's hurts/burns going down as well as going out....I'll stick to those sauces that are hot, but not akin to eating molten lava. I am off today, so I went and got some wings and I haven't really been a fan of any of the hot wing sauces I have tried thus far. They are more like "Mild" wing sauces. So, I also tried something different. Ran across this one.

    It was hot, but nothing that you needed to alert the local fire department about. Taste was good.....a little different (in a good way) and overall more like a Hot wing sauce. I would put the heat along par with Hooter's 911 wing sauce, albeit with a completely different flavor. If you don't appreciate burning your taste buds into oblivion, you may want to check this one out. It'll clear any type of backup in your nose and it provides a decent amount of heat, but nothing over the top. When you stop eating, it does retain, if not get just a little bit hotter, but that didn't seem to last more than about 5 minutes.

    I actually appreciate this thread (Thanks goes out to the OP) because locally, wing prices have gone through the freakin' roof. Most places that offer small wings charge about $14 for just 8, no celery, no Ranch or Blue Cheese.....just 8 wings. You want 10 wings, most places are over $18. You want 10 big, or decently sized wings? You are talkin' more like $24 or more....and many of them use typical sauces that aren't hot at all.

    So, I will be cooking wings at home much more often, as I went to Aldi's and got a pack of uncut wings for $12. Cut them all up and will end up getting 24 wings for $12. The sauce was about 6 bucks. 24 decently sized wings for 18 bucks? Sweet. Now I just need to hone in on that reference sauce. This one got me close to one (for me and my taste palette), but I look forward to any suggestions you all may have - that won't burn me a new digestive system and bung hole.

    Tom, I have used Melinda's Thai Sweet Chili sauce. I thought it was excellent. Wonderful flavor and adequate heat but not overpowering or unpleasant.

    I love habanero flavor but I can't tolerate most of them. I bought a bottle of Buffalo Wild Wings Mango Habanero and I had to toss it after using less than a tablespoon. :p
