I know this will be considered a no-no, but I love wings from Publix. But they aren't crisp enough so I put them in the air fryer for about 18 minutes and they come out great, imo.

Yes sir, wing night last night.....I had my usual "blow the rear seals out" and Ayesha wanted lemon pepper, I suggested "garlic" lemon pepper, she was down.
In a 6" sq baking dish, I finely diced 6 cloves of garlic, squeezed juice from 3 lemons, heavily peppered with coarse ground blk and half a stick of butter and put in the oven minutes before the wings were through cooking.
Once the wings had baked for 30min on each side, they were coated and baked for an additional 4 minutes each side.
I have to say, pretty darn good. You can see by the pics that the wings were coated pretty heavy with garlic however the taste of lemon was the first thing you get, then the pepper and only a mild hit of garlic.

Ok, so, did a couple chicken thighs the same way I do wings today. The only difference between thighs and wings is the wings tend to have the skin all around so it doesn't come off in one slab like the thighs do.
But, I pull any chicken pieces out when the seasoning gets the appropriate color and the chicken fat is sizzling in the bottom
One thing I do is if I am using a glas baking dish, I put some oil in because the glass doesn't get hot enough for anything stuck to release easy like a metal sheet pan does.
This is start to finish:
- Raw chicken in pan, salt and black pepper
- Covered in garlic powder
- Covered in paprika
- Drizzled some oil in the pan
- In the over at 425 for about an hour until the seasoning starts to blacken
So here's the pitchurs.
And yes, meatballs in a cast iron frying pan in the over with a dollop of bacon grease in the bottom is proof God loves us and wants us to be happy.

At our bar restaurant our hot wings were made using only Dave’s Insanity sauce.
How Chef Dave would make mild, med and hot was determined by how much the insanity sauce was cut with butter.
Our hottest wings were straight insanity sauce and we called them “**** in the Tub”, one A and two S’s
No bs.
We had a younger fella would come in at 5 o’clock every Friday.
He’d order arse in the tub with sides of straight insanity sauce and dip them.
People would sit there and watch this guy eat those suckers with him not breaking a sweat! -
