Sitting in Baugher's restaurant, by myself, reading through the recent "hostility" thread...wow, such problems! Anyhow, just ordered some corned beef hash, eggs over easy, and a side of scrapple. Yum!

mmm... scrapple. Everything but the squeal.

Don't get me wrong... I love the stuff (it is virtually unknown up here in MA) - but I try not to think too hard about what I am eating when I eat it!

In southern NC, it is known as livermush. Nom-nom-nom!

As a gratuitous aside, my son went to college in Westminster (graduated 2010); you can probably guess where! :-)

From my seat in the restaurant, I can look out the window and see the college on The Hill. Actually, the reason I'm alone is that my wife works there and is running an event today.

The scrapple was good! Fried to a crisp on the outside and mushy on the inside. Just how I like it. Today, I put some ketchup on it; other times I just easy it plain.

After they butcher a pig and process all the regular meat... It's what's left! Ground up snout and what not... and some corn meal.

It was an excellent school for our son. He double-majored math and comp sci, Phi Beta Kappa/Magna **** Laude (can you tell I am proud?) and is now in grad school. I am very glad he went there. Interestingly...
I was born and raised in B-more... we've been in New England for 20 years... but both of our kids chose to do their undergrad in the DC/B-more area! :-P I have grown pretty tired of slogging back and forth with minivans full of stuff over the years...

As to the question about Scrapple's provenance. I don't think you really want to know. If you think of pig butchering as being like oil refining... after the pork and the ham and the bacon and the pig's knuckles and the brains and the sausage... well... take what's left, grind and season and voila! Scrapple. It does taste really good, though.

You should be proud of your son! It's not widely known, but it's an excellent school with a stellar reputation.

York, PA is virtually Ground Zero for scrapple...

No... in all seriousness, it is far less salty than Spam. The flavor and seasoning is (far!) more subtle and nuanced. It really is quite good. The best quality scrapple has lots of real meat (in the broadest sense of the word!) in it and is pinkish in color when purchased - the cheap stuff is kind of a disheartening grey color, though.

Fried crispy on the outside and moist on the inside, as previously described, it really is nommy. Would I kid you?

I like Spam, but scrapple is far less processed and natural. I'll take it any day over Spam, although for many of you, I know that's not saying much!

Yeah man! My dad used to go there as a teenager, because it was also an excellent ice cream shop! That was the late 50s.

My son has to visit with the baseball coach at McDaniel College this week. So needless to say I am taking a road trip there. Where is this antiques mall you speak of ? Are they open weekdays ??

No but my brother lives very close and we go there just about everytime I am up there.

No sure exactly where it is NAP. Not too far off Main St. I do remember that. Worth the trip IMO.

This is a great thread to reanimate!

I LOLd at my own rhapsody on the subtle seasoning of scrapple. Not that any one else would

Perhaps I'll write an ode to scrapple.

PS Wednesdays are Omelet day here at the Hardy household. I am the omelet chef (omelets being quintessential Guy Cooking, of course). Living in NH, we have the bonus of our farmer neighbors' excellent smoked bacon on the side.

Come to think of it, you could, too!

    (no affiliation, I'm not a shill -- just a satisfied neighbor-customer!)

Hmmmm... maybe I could get 'em to consider the scrapple business. Diversification is key, you know?

    ;)

    Enjoy your breakfast, mdaudioguy!

PS Wednesday is pre-packaged granola bar day, just like the rest of the week. The only thing i got going for me is when my wife smacks my a$$ as i walk out the door. :(

Sounds like spam for breakfast....yuk! Hawaii consumes more Spam than any state in our union — in total, 7 million cans a year. According to the SPAM website, the island's love affair with Spam began in World War II, when GIs were served the salty luncheon meat because it didn't require refrigeration and had a long shelf life.Sep 24, 2012
