Many, if not most of you, have not heard of this southern springtime delicacy. See the attached photo. You miss out! I had the good fortune to travel to WV this past week on business and seized the opportunity to acquire this seasonal plant for consumption.
This plant is a wild leek that folk are attempting to cultivate now (and it is resisting, just like how people resist domestication!). Mainly picked from the woods, this leek is a culinary treasure of southern fame! However, it is not prized within Appalachia alone. In Quebec, it has been so over harvested from the forest, that it is now declared an endangered species.
