Newbie question about HT

I'm very new here and have lurked for as much information as I can find but now have some questions. I want to setup a home theater system and plan to purchase a pair of polk audio lsi25, lsiC, and pair of lsifx for a 5.1 surround system. The intent is for music and HT. I plan to power it with a sunfire grand 5 amplifier. My question is with a preamp/processor. Will a sunfire grand theater II processor process the blurays and HD satellite signals along with all the other formats and convert them to 5.1 and will I notice a difference without HDMI hookups verses a processor that would have HDMI. I may not fully understand this concept and would appreciate help. The sub I want is a dsp micropro 4000. Would this setup with the preamp and amp work between music and HT for my planned use. Once again its for music as much as HT, I've had stereo's my whole life (mid 40's) but haven't upgraded in 20 years or so and I'd like to view this as the next 20 year audio setup. Thanks for any help.

No it won't. It will only do Dolby Digital and normal DTS. The Grand Theater II is circa 2002. There is no HDMI either.
