sub connection

Hello, I appologise if this topic has been covered in the past. I perused but didnt see it so here goes. Could someone please explain the concept of bi-amping? Is it an amp for the lows and an amp for the highs(as a car stereo would be) or is it (2) amps to the same posts and crossed over using the speakers xover? My question mainly pertains to a custom built subwoofer that I will be adding plate amp(s) to. The speaker is a dvc and has a 4 ohm per coil rating. I purchased (2) dayton 240 plates and plan to connect one to each coil. I have a y splitter from the sub out on the receiver but could also use the sub out on the player if it is the better connection. Also, how critical is the setting on the amp as far as low pass filter settings and volume? My thought was since there is absolutely no way I will play at full volume(I rather enjoy my windows) is it feasable to set the volume on the amp on high and reduce gain at the receiver with out burning up the amp. If absolutely necessary i can replace the xover pot with equal capacitors and eliminate the possibility of unmatched filtering. Thanks so much for your info and expertice it is greatly appreciated.
