    I only had a sliver of it yesterday, but it was damn good. It was less crumbly than I thought it would be in that I was able to cut it with a knife (although my Wüsthof knives are mighty sharp).

    Anyways...very cool experience. Back to the 8-9 year stuff for me just because of the price.

    Great cutlery! All my knives are Wüsthof Trident. I've had them for years and they are just as sharp as the day I bought them. I just use a sharpening steel, about 5 to 7 strokes per side, before each use and I can shave with them.

    The price of the 15 year old cheese is too steep for me.

    I've never had any aged cheese before, but I enjoyed it.

    The crystals were something new to me, but I didn't seem to mind them. Overall I'd say it was pretty good, but I couldn't see spending that much on a half pound of cheese again. I may look into the 8-9 Y.O. stuff like Demi mentioned.

    LMAO!!! Haven't you had any really sharp Italian provolone? That is fondly referred to foot cheese and is loaded with crystals. Stinks out loud though and it's so sharp it burns your gums but with some good Italian meats or covered with extra virgin olive oil it is heaven.

    So what's the verdict?

    To me it was very good and an experience, but there isn't a big enough flavor difference (I didn't think) between the less expensive 8-10 year aged stuff.

    Would have been nice to have them both side by side.

    Did you fellas notice more intensity when biting down on the crystals? I know with extra, aged sharp Italian provolone, there is more bite in the crystals.
