Setup:

Sony STRDH800 Receiver
Polk Monitor 60 Front Floorstanding Speakers
Polk CS-2 Center Channel
Polk PSW505 Subwoofer

I have all the speakers wired with monster speaker cable, and a monster m1000 LFE cable to the sub.

I have the gain on the sub at the max, and for me to get any good amount of bass out of this sub I need to turn the volume up so loud that the front floorstanding speakers are WAY too loud...

There is a setting on my receiver for the front floorstanding speakers: Small vs Large.. I've tried both settings -- no difference.

Any suggestions?

    ^^^ what he said!

there should be an option in the receiver to turn up the level of the sub. You want to turn down the sub to approx 1/2 and then adjust the volume from the receiver. Does your receiver have a calibration option? Also on your speakers you would want to set them to small so that all of the lower frequencies are directed to the sub.

    -edit-
I just checked and the receiver does have calibration. Run this first. If still an issue look on page 50 of the manual for setting the subwoofer level.
    Front - RTiA5's
    Rear - RTiA3's
    Center - CSiA4
    Sub - PSW110

The calibration should be viewed as a guideline. Once it's run, tweak from there manually to your preferences. But DO make sure the sub is not turned all the way up on the sub itself. Go halfway or very slightly more, and then adjust from there on the AVR.

+1, those auto calibration programs are nice, but IMHO they are just a starting point. Fine tune as necessary from there, I did that with mine and when it was all said and done it sounded great. Welcome to Club Polk.
