I see some people on the forum have upgraded the crossovers in some of their speakers. Can all Polk speakers benefit from this upgrade? What's involved and what are the benefits? Should I upgrade mine?

Check out the DIY section of the forums. There are a ton of threads about people upgrading their crossovers.

When you take and replace components in the x-overs with higher performing components you will generally hear a difference in sound. Now getting the exact sound your looking for will take a little research and good accurate advice from the guys around here.
The short answer to your question is, yes when done properly.

Yes, I am sure it will help. Keep in mind that you are starting with low cost speakers though, so I would stay with Dayton or Solen caps. (i.e. - some less expensive ones)

From what I can tell, they use the same caps in all their speakers (they may use electrolytic more in their less expensive speakers - but still the same brands seem to be in use)

What I take away from that is you will see a similar benefit from upgrading the crossover as you do in more expensive speakers, but you will not hear as much of a difference as they are not as weak a link in the less expensive speakers. It will still be worth doing, but I would not spend big bucks in doing it. (i.e. - I would not spend the money for sonicaps or similar brands, I would stick with the less expensive solens or daytons as mentioned)

Either way - give it a shot and let us know what you think.

BTW - Face - his sig is showing monitor (recent series) speakers.... I assume he is upgrading those.
    Mains.............Polk LSi15 (Cherry)
    Center............Polk LSiC (Crossover upgraded)
Surrounds.......Polk LSi7 (Gloss Black - wood sides removed and crossovers upgraded)
    Subwoofers.....SVS 25-31 CS+ and PC+ (both 20hz tune)
    Pre\Pro...........NAD T163 (Modded with LM4562 opamps)
    Amplifier.........Cinepro 3k6 (6-channel, 500wpc@4ohms)

Do some searches on this forum and you may be all set. If you were to post more accurate information as to what you'd like to accomplish, what were are working with and budget that will help.

I mean like would with all the added costs it REALLY be worth it? I know it was a pretty obvious question at first.

    Of course.
you might search under Rt55's as well. Ppl like them, but are some tweekes to make them better.

In those, I would definitely go with the SonicCaps on the HF, if not both.
