When connecting a center channel speaker to an amp via pre-outs of an AVR, can I go from the AVR to the amp via digital audio coax cable. (one prong to one prong)?

yes. Might not be the best cable to use though

A digital cable is just 75ohm coax. Many standard audio cables are also 75ohm coax, it will work just fine.
