Help on my Onkyo 805 Setup

Alright...if you've been following my other threads, you've seen that I've recently purchased some new speakers.
I just don't feel that I'm getting the most out of them.
The front three sound great.
The back two are ok. Any idea what setting I should have this set on?
I can't find a setting that is only 5.1. It's either 7.1 or nothing. I only have 5 speakers set up, but none the less, I'd like to make sure it's set up correctly.
And some stupid questions that I think I know the answer to, but want to make sure. Just because the receiver says all speakers are being used, not all TV channels are 5.1 and such so the backs won't work, correct?
