So with my new head unit it has a digital volt meter. i always assumed that when driving at night with my lights, say fan on medium, and stereo up pretty aggressive that i was "starving" my amp for power since my light would slightly dim but this may not be the case...or it might i dunno

while driving and all of the above going on it never drops below 14.1v and when at a dead stop the lowest ive noticed was 13.3. now i know that 14.4 is considered perfect but knowing all this do i even need to bother upgrading to a 200 amp alternator from the 130 that is on it currently?

Doesnt seem like it. Seems like its working just fine.

You could always do the upgrade as its good to have extra power but a bigger alternator means more drag on the engine. Id leave it alone.

    Chevy versus Ford.

Personal preference bro. Both make quality pieces. I prefer Alpine for the looks and their processors and EQ's are MUCH easier to use.
