The AES Standards cover just about every damn question I wondered about and is very informative.
In particular they set standards for subjective evaluations which is covered in aes20. Information regarding XLR, TOS and dig coax is also covered by the AES. Lots of cool broadcast, recording and transmission information can also be found in the AES.
