What will produce a better video signal off of non-HDTV DIRECT TV...
S-VIDEO cable or
a copper coaxial cable

Those are both analog video connections. In theory, the S-video would look better.

Composite - S-Video - Component - HDMi.
THe Component to HDMi would be the most disputed IMO, but HDMi is required to upconvert and it also carries sound. That makes it stand slightly better in my judgement.
Of those choices, only HDMi is considered to carry a digital signal.
