English Muffin Pizza

Anyone else like these things? I love them. I just made 8 of them for myself to eat for dinner....probably 3000+ calories conservatively. I haven't eaten since 7am and could eat a horse right now. This should fill me nice. And don't even think about lecturing me about eating before bed....those of you who know me somewhat know I don't sleep much anyway so it doesn't really matter. Plus, I'm hungry from having a ridiculous workout at the gym tonight.

    Man, you totally botched those up.

    All you needed was some pepperoni slices, but no, you had to go and make it more complicated.

    Wow , haven't had those in years.

    Had them quite often growing up with my 5 siblimgs.

    Excellent low cost good tasting meal.

    Muffins, sauce and mozzarella, cook and eat.

    Shoot , now I'm hungry, time for an ice cream snack. ;)

    With the technological advances in cheese and english muffins I'm betting they taste even better today than they did many years ago. Also, I'm finding the bacon ones a bit on the bright side, with the olive one being neutral and the roasted pepper ones are definately warmer. The roasted pepper is definitely my choice, next time I will be looking to integrate some pesto and maybe a different kind of cheese into the mix to change things up a bit.

    EDIT: The olive and roasted red pepper mix wins this showdown hands down.

    I guess just using the oven will work, but I'd suggest you pre-heat in the microwave, than output your muffins to a compact power toaster oven in order to draw out all the delicacies of your concoction.

    But, if you're happy with just an oven, than go with what makes you happen.
