Turkey Day!!!!!!!!!!!!

Some how this has become my favorite holiday. My mother is an unbelivable cook and my wife is in school to become a chef, so we get some fantastic food!!! We have a 15lb bird soaking in brine for 2 days, a turkey breast being cooked another way that is beyond me but I can't wait to taste some. Dates wraped in procuite and blue cheese then cooked. Roasted potatos, mashed potatos, carmelized french cut string beans and much more. Many bottles of wine, family and some friends (if your a friend with no place to go, our door is open for all holidays). Football, and a nap.

The best part about Thanksgiving Day is after you pass out from eating and drinking too much, you wake up and have turkey and mayo samitches with stuffing and cranberries on top.

Sounds like you're going to be for a real culinary treat!! Save room for dessert. What school is your wife attending? I'm a CIA grad from '74 (giving my age away here) I've made the rounds in a few nice places as Executive Chef. It's a crazy business but can be a whole lot of fun. Best of luck to her. Thanksgiving is great because it's about nothing other than being with family and / or friends, having some good food, and of course, "being thankful" for the good things you have, cheesy as the last thing sounds.If you will it, dude, it is no dream.

I don't think that sounds cheesy at all. . . our tradition is to go around the table after saying grace and expressing what exactly we are thankful for. It can last a half hour or more so you can imagine having 10 - 15 hungry people staring at the food while each gives their own little dissertation. By the time the fifth person starts everyone starts squirming in their chairs, it can be quite comical but no-one touches a morsal until we are through. -

The restaurant school of Phila. (Walnut Hill college).
CIA is big time. I bought a text book at the calif. location a few years back. It looked like a great school.Michael

Excellent school. She's learning from top pros. I graduated from the Hyde Park, NY. campus. The Calif. campus was just in the planning stages back then. 23.65lb bird is outside on the back patio, in ice and brine. Temp holding at 37 degrees in the bucket.

The bird is in, the ham is in an incredible table has been set by my other half and child, mom, pops, brother friends will start arriving at 1:00 P.M. My dad will deliver an awesome Thanksgiving prayer. The Lsi9's have been setup with the B&K gear, kids running around, people poping in and out. A whole lot to be thankful for, this is what I am talking about. HAPPY THANKSGIVING, POLKIES
