Things to do with Artichoke Hearts

I bought this giant jar of artichoke hearts marinated in oil and I don't have any idea what to do with them. Salad's come to mind, but that's about the only thing I can think of.......so........

Ya'll have any ideas for what I can do with these things? I could eat them individually as a snack, but that would get very old, very quick......

Oh, and keep in mind I'm tryin to keep the diet (starting today...lol) as low carbesque as possible......

    They go well mixed with olives, mozzarella cheese and tomatoes or as a side dish with Italian meats or Maryland crabmeat.

    eat them as is and or add them to a home made pizza

    They also go well sauteed over pasta with pignones and some good reggiano, but you're watching your carbs...

    Hey, good luck on the change in your eating style.

    I've said it before, but EAT every couple of hours. It'll keep your body out of the "I'm starving, I'll store everything as fat" mode.

    Pleasantly suprised to see that no one suggested that you get artichoke hearts withOUT the oil.
    Your body needs oil, make sure it's not polyunsaturated or loaded with transfats.

    Again, good luck and remember: the advice you'll get is worth every cent you're paying for.

    I'll second the pasta and pizza. They go great with them. Also, like someone said, chop up some nice firm tomato and some cucumber, add some olives and feta or greek cheese and some artichoke hearts and mix with a little garlic and oil and vinegar or some balsamic vinagarette.

    Reminds me of the old story.

    Bill is standing in line at the grocery with some food for a grill out that night. Along come Artie who Bill hasn't seen in ages. Bill gives him a big bear hug and they catch up.

    Halfway through the conversation, Artie says to Bill, "Remember that dollar I borrowed from you years ago? I want to pay you back."

    Bill replies, "Don't worry about it Artie, that was a long time ago."

    "No, really, I insist" Artie retorts. "Tell you what. I am a hit man these days and I will kill someone for you to repay the dept. Do you have anyone you don't like?"

    Bill thinks a moment and finally says, "Oh OK.. I really don't like that cashier."

    Without another word, Artie walks over, grabs the cashier by the throat and starts to kill him. While he is in the middle of choking the cashier, an assistant manager runs up, screaming to stop. Artie throttles the assistant manager at the same time. Finally the store manager runs up and tries to intervene. Artie takes care of all three of them.

    I bought the same thing at effin Costco last year thinking that I would know what to do with them once I had them home. Just threw away the unopened jar about a month ago.

    I do like eating them just as is, but that can get boring quick........

    Thanks for the suggestions guys......when I get things movin over the next few days I'll put together some sort of an eating schedule (as opposed to whatever's around is in danger type of eating)......

    Just eating those things will lead to painful mornings. :o

    I like them in pasta dishes, and on pizza, etc, but yeah...like others have said not exactly low carb. Isn't that fad over?

    It's just me...but if I found those things in my refigerator, I would feed them to the dog....but he's pretty picky so I would probably throw them away!
