    I've done this before. Actually, it doesn't have to be Diet Coke-it just makes it easier to clean up.

    What causes this is the carbonation. The CO2 gas combines with the H2O. What you are seeing is the bonds between the two being broken, same thing happens when you shake the coke. Anyway, the arabic gum in the mentos easily breaks the surface tension and quickly breaks the bonds.

    Long story short, the more carbonation, the better.

    I just saw a fun little News brief on this and they stated that it was the additional surface area provided by the mento's that facilitated the accumulation of the bubbles. They even went as far as dropping rocks into the liter bottles which caused the same effect.

    It made the news here, and apparently it's worth about $10,000,000 in ad costs for Mentos by this being all over the internet.
