I agree that Eagles HFOT is really great.
Another one or two you might want to consider

Billy Joel-The Essential Video Collection- Sony mastered- Great sounds

"Weird AL" Yankovic-The Ultimate Video Collection-Funny and Fabulous

Both 5.1 sound and entertaining

Pearl Jam - Touring Band and Live @ Madison Square

    Ditto on the Eagles

My dream is an awesome Doors 5.1 mix or a 5.1 of Nirvana Unplugged.

kraftwerk - maximum minimum this has a dts 5.1 mix

jean michel jarre - jarre in china
this is just outstanding, i know you guys have heard this from me before, but really its WOW. this also comes with a 5.1 dts mix

another one from jean michel is AERO, this was composed and constructed for 5.1
this is another with a dts mix, the visuals on this dvd are kind of interesting - its a pair of eyes looking at you for just over an hour, it's a bit strange, so there is an option to turn this off. the simplicity of the visuals allows you to concentrate on the music more, which jean michel has succeeded in doing.
    its well worth a listen
