Frank as long as you are dispensing advice (thanks for that by the way) do you have any opinion on amana furnace and a/c? We have one in our 4.5 year old house and the furnace has had a number of problems. (most done under warranty)
The furnace does work well (when it is running anyway) but it is the A/C I am really wondering about. It seems to be sized very close to the limit for our size house. It will maintain temp (about 74) in the summer with the outside temp in the mid 90's but if you try to drop the temp even one degree it will run all day and not drop the temp that one degree until after the sun goes down.
I have a honywell programmable thermostat (it has the "learning" feature you mentioned earlier), the A/C is a 10seer, 3 ton unit. My house is 2600sq ft. 2 story - R13 walls, R30 ceiling. I run the fan all the time to equalize temp between the two stories.

I know that wouldn't work in Florida. I have a 5 ton in a 2300sg ft 1 level house.

3 ton is too small considering the square footage and the higher humidity level...higher than Colorado at least. Without seeing the home it's difficult to say, but my best guess is that you need .5 to 1 ton more than you've got now.

Hey Frank, one more quick question I just thought of. When you mentioned sealing off all the duct work, what type of tape should I use for that? The only tape that is currently allowed by the Uniform Mechanical Code must be UL-181 rated. You can also pick up a 1 gallon bucket of duct sealer, its applied with a brush and seals very well.
