Okay, i've been looking at this stuff for quite some time, and i still can't make heads nor tails of it.

how many channels of audio does digital coaxial (SPDIF) carry? how about toslink?

it's been literally impossible for me to find a straight answer to this...

It carries as many channels as are encoded in the signal. They both (coax and toslink) carry the exact same signal. People fight over which does a "cleaner" job over it, which is fine, but any differences like that are purely up to the listener. The basics are just that they carry the same signal, whcih can be anywhere from two to.... N channels.
If you will it, dude, it is no dream.
