There is no genuine justice in any scheme of feeding and coddling the loafer whose only ponderable energies are devoted wholly to reproduction. Nine-tenths of the rights he bellows for are really privileges and he does nothing to deserve them. We not only acquired a vast population of morons, we have inculcated all morons, old or young, with the doctrine that the decent and industrious people of the country are bound to support them for all time.-Menkin

I love to cook as well! As a matter of fact, I enrolled in our community college's course last year. I'm 41 years old and was thinking of a career change as a chef. Originally started out going for the degree but soon decided just to zero in on the 'hands-on' lab classes. The bake shop classes were so cool and the cooking classes were a blast to boot. After talking at length with some of the seasoned chef/instructors (ok, bad pun!) they enlightened me to the fact that the industry is really geared toward a younger workforce. Read: Constantly bustin' yer ****!! So I think I'll wait another 9 yrs after I'm eligible to 'retire' from my current employer (30 yrs) and take the remainder of the classes (they are in the evening and I work 2nd shift by choice) and do something I enjoy part time for a living......
One of my favorite breads we learned was an herb & oil loaf with seeds on top, and you brush it b/4 and after the bake with an herbed garlic oil, which makes the bread very soft and chewy. Goes great with homemade pesto! If there's ever a 'gathering' of Polkies up in my neck of the woods, I'd be happy to make some and bring it along......absolutely awesome!:p
I'm a little behind the times and I don't have a computer at home or a digital camera, or I'd post some pics as well - but maybe someday - Hell, we just upgraded to our H/T & stereo after 20+ yrs of a faithful old Onkyo & a 25" Zenith. Still running an antenna on the roof - No cable or dish, pretty much just watch DVD's. But I kinda equate that with the 'down home' lifestyle. Which is why I love to cook and bake hearth breads by hand. Another little trick I learned is that if you go down to your local brick store and purchase some fireplace bricks (need to measure your stove's interior) and place them on an inverted jelly-roll pan on your stove's floor, it replicates a brick oven - Makes the BEST pizza! Crank up the oven to 550 or hotter and let those bricks pre-heat -Man, you get signature 'oven spring' pizza crust just like at the pizzeria - Works great for hearth breads as well.......Just place the dough directly on the bricks - make sure you dust the peel with cornmeal first, otherwise it'll stick.....Okay, I think I've rambled long enough - don't want to bore all of you! :p

I am starting to like cooking more and more. I have found good food takes only a tad bit longer to make than crappy food, but it tastes much better, and you eat less of it. So, its fun and rewarding to learn.

The chairs are remakes, But authentic 50's lucy chairs reproductions, the take is original 50's.. the cabinet in the background is a vintage hoosier from around 1910 - 1920, i restored it myself.. we have a 50's kicthen with mostly real stuff..

Not records nailed to the wall and checked tile like some people call a 50's kicthen, :D its our hobby
