Ceviche What is that?

here is a wonderful receipe if you like pico de gillo salsa. It's called Ceviche. It's a salsa from Latin America. Some of you all's might already be familiar with it. If you're not.. and in the mood for something really, really good.. give it a try.

I haven't met one person yet who didn't like it. It's that good. :D

Ceviche

Ingredients and Instructions

Step I:
1 pound cod, (or any lean white fish) diced in 1/2-inch cubes
1/3 cup fresh lemon juice
1/3 cup fresh lime juice
1/2 teaspoon salt
1/2 teaspoon dried oregano

Mix ingredients well. Marinate in refrigerator for two hours.

Step II:

Drain juice completely from fish mix. Combine and add to drained fish:

1 tablespoon olive oil
1/3 cup fresh lemon juice
1/3 cup fresh lime juice
1/2 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon ground cumin
Step III:

Mix well and add:

1 medium tomato finely chopped
1/2 medium onion finely chopped
1 teaspoon vinegar
4 ounces cooked tiny salad shrimp
3 fresh jalapeno peppers, seeded and finely minced (wear gloves)
1 tablespoon finely chopped fresh cilantro

Stir and refrigerate eight hours or overnight. Serve cold on a lettuce leaf with crispy tortilla chips.

Note: The acid in the citrus juice actually "cooks" the fish so no heat is necessary.

Yield: About 4 cups or 8 appetizer/salad servings

    Ceviche is incredible, never had anything like it.

    For those in the Dallas area, try it at Desperado's on Upper Greenville or their other location in Richardson-you won't be disappointed.

    Yuck just did the sushi thing in CA and Im still sickened at the thought of raw fish. The Unagi wasnt bad though.

    well this one isn't raw. it's cooked. and it's similar to salsa and chips you'd have at many Mexican resturants.

    Anytime I see something in quotes it makes me fearfull.

    Don't be afraid to add a bit of cooked, diced shrimp to the mix as well!

    oh yeah. i made this for a BBQ over the weekend. I used fully cooked small salad shrimp and imitation crab. turned out excellent.
