    I hope you all had as nice of a Thanksgiving Day as I did. Both my daughters came, my two grandsons, and a couple other friends.

    I stumbled across a video on YouTube explaining the benefits of butchering the turkey before cooking and went with it. Cutting it into pcs. was pretty easy, it's big so it's easy to work on. Then you can use the carcass for stock, and I put that on low simmer overnight with some veggies, rosemary and thyme.

    The stock was used for some of the best gravy I have ever had. The turkey was dry brined overnight, then seared skin side down in large stainless steel pans and then roasted for 35 mins for the white meat and about an hour for the dark. It came out excellent, juicy and tender and will now become my permanent way of cooking turkey.

    Oh, and we expected more people so there were two extra legs that we bought. Just in case the photo make it look like it was a mutant.

    and of course pumpkin pie.🙂
