4th of July on the grill!

So @kevhed72 got me thinking, we should have a thread about grilling for the long weekend. I am making smoked pork belly and pickled slaw tacos, and chimi churri shrimp tacos for a pescatarian guest. Sides will be fresh corn, tomato, basil and feta salad and grilled peaches and vanilla ice cream for dessert.

Tonight I’m going to make the best darn baked potatoes you’ve ever had - smoked baked potatoes! With reverse seared ribeye, sautéed green beans and French bread…and a really good bottle of wine. Out 20th anniversary was in may and we are still celebrating! I’ll try to post some pics later.

    Nice! Whenever I do ribs it’s always st. Louis style…just made those for friends last Sunday.

    I just sold my Weber gas grill to a buddy and bought a black stone griddle…I think it’ll get more use…

    I am also using hardwood lump charcoal with apple smoking chunks…would love some cherry! And what I really want is pimento wood. Wife and I have been to Jamaica twice and as much as I love my jerk chicken on the kamado joe, pimento seems to take it to another level!

    That’s what I figured…but I will say that even a frozen pizza is much better on a charcoal grill…

    I love cooking pork belly cut in cubes like that on my BGE. But the wifey **** it’s too much fat? Maybe I need to look up how to make those yummy sandwiches with the slaw topping your describing. Thanks for sharing. Love yours. D

    You can eat well and eat cheaper than frozen pizza…weren’t you a line cook at one point?

    Purchase a pack of naan bread or those packs of pizza dough mix where you just add water, a big ole block of gubment cheese (as my bro-in-law likes to say), a can or two of diced tomatoes with garlic, and a pound of Italian sausage or ground beef. Freeze or store what you don’t need, and you will get multiple pizzas us extra cheese for quesadillas, and it tastes so much better than tombstone…

    Foods just not that important to me, couldn't tell you. If I were given the option to never have to eat again but still live I'd take it where everyone I've ever asked that to says no they enjoy food too much to accept that offer. I mostly eat because I like being alive not for the enjoyment.

    Son-in-law and I split a butchered lamb several months ago. Today, eating leftovers from smoked then seared/grilled shoulder steaks I did, Friday. Used a recipe from an authentic Greek cookbook I picked up in Athens while backpacking there in the 80's. Simple but great flavor that doesn't get in the way of the lamb. Added some garlic and doubled the oregano.

    No pics but also did a chitload of veggies that were smoked and seared...zucchini, asparagus, mushrooms and peppers. Eating good in the neighborhood!

    Thanks - Yea, Traeger. I do a dry rub the night before, then put them on at 275 for 1.5 hours. Then they get sauced and cook for another 1/2 hour. Then the get sauced again (top and bottom) and wrapped in 2x layers of foil and cook for another 1:45 meat side down. Then they come off and sit for 15 minutes. Best ribs I’ve had:-)

    Mine is not nearly the caliber of grinning as what I'm seeing here but I'm improving. I just picked up a Pit Boss Pro 850 wood pellet grill for 50% off at Lowes because it had a bent leg. It was an easy fix. So far I am impressed compared to propane grills. It is a little slower but my steaks came out tender and very flavorful, subtle smoke and the best I've done so far . I can't speak for the chicken tenders because I am allergic but my family liked them. I also did some burgers today and they were also the best I had done.
