    When you said "some" do you mean you did some whole racks of untrimmed ribeyes and racks of new york strips? Or did you try and age already cut steaks. The best you can do with already cut steaks is leave them on a rack for a couple day so they lose some moisture and concentrate the flavor. Wrapping cut steaks in plastic for 2 weeks would be yuck!

    Also you don't get much tenderization till 21 days even with whole cuts.

    Good points, you also have to control the humidity, the average refrigerator has 65% humidity which is a little too low and will dry out the meat.

    Thick cut store bought steaks. Pulled them out of the wrapper and vacuum sealed them in the umi- dry bags. Put them in the low humidity drawer of my fridge separated by cooling racks and 1" blocks of wood for air circulation. I trimmed off the outer dryish skin, seasoned with salt and pepper and grilled.

    Edit: I regularly age beef in the store wrapper for a week or so until they turn brown then vacuum seal and freeze until we are ready to cook them. Thaw them in a cold water bath prior to cooking and that always yields excellent tasting tender and juicy steaks.

    This time I went boneless ribeye. Started on the 6th and will be ready on January 6th or later.

    Is old, dry meat edible? If it takes more than 30 minutes to cook then it’s not on my plate.
