I have those (Costco?) Sapphire and Ruby HDMI cables

The Ruby is not from Costco and it appears that they are not made anymore. Anywho, where would you look for a difference, audio or video with HDMI cables?

    Depends on what you’re replacing, and what tv you have.

    On a $300, 55 inch set, probably no difference.

    On the other hand, something like the Sony 900 series, replacing Amazon basics, both will improve. The audio will be most noticeable, again, depending on the surround system.

    Better gear, more noticeable improvements with most any better quality cabling.
