Never heard of it before, and before seeing the receipe, I was concerned that something like Rocky Mt. oysters would be involved.

Texas caviar is yummy
I also like to take diced red fish and shrimp cooked in lime juice like ceviche and stir it in the TX cav mix2-channel: Modwright KWI-200 Integrated, Dynaudio C1-II Signatures

There is a Vietnamese recipe, thin sliced raw rare beef cooked in lime juice and herbs that is to die for. I have tried making it at home, and tried it one other place in Houston....but
