7.1 distance
What's the ideal distance behind seating for the surround backs in a7.1 set up? Is 10 feet ish too far? It's either that or like 2 feet

Depends on the speakers, and how high your placing them.

Ten feet should be fine and preferable to the speakers being too close. Auto setup in the receiver can control for timing and distance differences at the seating area.

Really, more important than distance is angles to listening position.
See the following:

Speakers are polk rt2000p fronts, cs350 center, ls/fx side surrounds, and rt3 back surrounds, svs pb2000 sub, all run off denon 3310ci. I can either mount them on the front of the bar, top of the speaker will be 4 feet of ground. Or I can mount on back wall, about 8-10 feet behind couch(haven't built that wall yet) and can mount whatever height. But they will be behind the bar

Would go with on the bar.
