I've been trying hard to dig up any info online that might tell me just what The Ed Sullivan Show (or any TV stage shows) might have used for sound equipment back in the early days ?

No idea, but I'd reckon lots of it was from RCA's commercial/broadcast products catalogs
Those are readily available for perusal at:

... lots and lots of other good stuff at www.americanradiohistory.com too; kind of a messy site interface, but worth nosing around; plenty of gold to be mined

I just read that early PA systems were used for vocal duty, to augment the band's guitar amps.
One of the funniest things I remember seeing, was an early video of The Rolling Stones doing "Satisfaction" on stage.
Everytime Keith would step on his distortion pedal to play his signature lick, the guitar fuzz part would be half the volume of his rythym part.
My guess was that sound techs back then didn't understand the concept of guitar distortion and probably thought their gain was set too high.
